RECIPE: The Ultimate Post Holiday Turkey (or Ham!) Sandwich

Smart Balance Margarine
Smart Balance Mayo
Habanero Jelly
Jalapeno Dip
Onions Sliced Thin
Tomato Sliced Thin
Avacado (cut in half and then scooped out with a spoon)
Turkey or Ham (leftovers sliced thick!)
Fresh Spinach (lettuce) or Alfalfa Sprouts
Pepper Jack Cheese Sliced Thin


Spread the Non-Transfat margarine on both pieces of bread (to prevent sogginess). On just one side spread the mayo and about a teaspoon of jelly. On the other side, spread the (Meadow Gold) Jalapeno Dip. On this same side, scoop and place the avacado pieces and then the onion slices.

On the other piece of bread lay down the cheese and then the tomato. Cut the turkey or ham into thick pieces and lay over this. Lastly, add your lettuce on top of all this.

Now lift both sides of the sandwich at the same time and slap together quickly. Lay the sandwich down and press slightly to hold it all together.

Cut into four small squares and enjoy!

The Matador - My Healthier Version
1 shot Vodka (or traditionally Tequila)
1/2 shot Lime flavored Vodka
1/2 shot All Natural "Simply Limeade"
1 shot Low Carb Diet Apple Juice
2 shots Fuze "Slenderize" Strawberry-Melon (instead of pineapple juice)
1 shot Water

Shake with ice and pour.

The Low Carb "Long Beach" Diet Cocktail Low Calorie Low Fat Alcoholic Beverage

I Loooove  this drink! It's one of my favorites. It's like a Long Island Ice Tea but with Cranberry Juice; sometimes called a "Long Beach".

I use:
1/3rd each Vodka, Rum, and Gin
(Lately I've been enjoying 1 shot drinks. That way I can drink more drinks and enjoy drinking for a longer time, making the "Buzz" last a bit... before passing out. LOL)
1/3rd shot R.W. Knudsen's (It's hard to type when you're already buzzed - I just finished my taxes - yay! So that deserved some celebration  ; )
(as I was saying: 1/3rd shot) Lemon Ginger Echinacea
1/3rd shot All Natural Simply Limeade
1 shot Diet Low Carb Cranberry Juice (Kroger's or Ocean Spray works pretty well. Look for less than 10 carbs per 8 oz. serving)
and then 3 shots Cola (I like Diet Caffeine Free)
and lots of ice

Nummmmm! Goes down so easy and you can't taste the liquor.

Of course, if you're not on a diet you can always use the regular stuff. But, hey, sugar is really bad for you. That's it, I'm off my soap box. Do WETHYW. Life is about choices after all.

Ohhhh, the relief of taxes done. It kinda sucks to have your own business. So much more complex. Hey, maybe with my new job, I'll be a corporate clone now ( when ORGANIC becomes the MACHINE). Wouldn't that just be so much more easier. NO.

Diet Cocktail Recipes: Miami Lemonade (a Pink Martini Lemonade) Low Cal Low Carb Low Fat

One of my favorite (original and healthier) COCKTAIL Recipes:


MIAMI LEMONADE (a PINK lemonade!)


1 shot Rum

1/2 shot Gin or Vodka
1/8th shot (a capful) of Amaretto

2 shots Light V8 Fusion Strawberry-Banana Juice
2 shots All Natural Simply Limeade or Lemonade
1/3rd shot KW Knudsen's Lemon Ginger Echinacea Juice (optional)

Nummm!! This drink is great for the middle of the winter. Cuz... it reminds one of those warm southern Florida beaches.

I like to shake mine with ice in my plastic Protein Shaker. I do have an old fashioned large martini shaker but the metal just gets too cold for me. Then I pour it into a martini glass. This drink would be just as good over ice. Cheers!

Diet Cocktail Recipe: The Rough & Ready Low Calorie Low Carb Low Fat

An original rootbeer cocktail recipe. It's pretty good, I think. Check it out:

The Rough & Ready  (a Root Beer Cocktail)
1 shot Rum (64 cal/zero carbs)
1/2 shot Gin (64 cal/zero carbs)
1/4 shot Amaretto
1/3rd shot Simply Limeade or just a squeeze of lime (for fewer calories and carbs)
1/3rd shot R.W. Knudsen's Lemon Ginger Echinacea Juice (I find it at Smith's Grocers)
4 shots Diet Hansen's Rootbeer (found in most health food stores) Zero Everything! Carbs, Calories, Fat, Caffeine!

Diet Cocktail Recipe: Fuzzy Navel Low Carb Low Calorie Low Fat

The celebration continues! Happy Friday!
My healthier version of the traditional Fuzzy Navel cocktail:

1 shot (1 oz.) Smirnoff Lime Vodka (64 cal/zero carbs)
1/2 shot Gin (32 cal/zero carbs)
1/4 shot Sour Apple Liqueur  (18 cal/1.9 carbs)
2 shots Santa Cruz Organic Strawberry-Lemonade (sweetened with evaporated cane juice: 10 times less processed than refined sugar!) (22.5 calories/5.75 carbs)
2 shots Simply Grapefruit Juice (100% real juice! No added sugars.)(22.5 cal/5.2 carbs)
1 shot Water (optional)


Sour Apple Liqueur has 72 calories per one ounce shot! Wow. And most cocktails require a full ounce. But, here, with only 1/4 oz. we will reduce that to only 18 calories without sacrificing flavor. Carbs = 7.5 per oz. so ¼ oz. = only 1.9 carbs.

Our totals: 
Liquor = 114 calories
Mixers = 45 calories...... Total Calories = 159

Carbohydrates:
Liquor = 1.9 carbs
Mixers = 10.95............. Total Carbs = 12.85 

So it's not really a super duper low carb cocktail. But when compared to the original Fuzzy Navel with, on average 275 - 300 calories per serving; and 37 to 50 carbs on average... well, it's a pretty good savings. Especially if you have more than one. And who can have just one? Again, I ask you, who can have just one?

Recipe: Ginger Punch Cocktail Low Carb Low Calorie Low Fat Diet

My "Ginger" Punch... get it...
"Ginger and Mary Ann here on..." You might have to be a Baby Boomer to appreciate that one.

Anyway, you'll love it. It's great for both a low carb diet or if you're just watching your calories.


Ginger Punch Cocktail:  Low Carb Low Calorie High Seas


1/2 shot Gin (32 calories/zero carbs)

1/2 shot Vodka (32 calories/zero carbs)

1/2 shot Rum (32 calories/zero carbs)

4 shots (4 oz.) Diet Hansen's Ginger Ale (available at most Health Food Stores... zero carbs, zero calories, zero sugar, and zero aspartame!)

1/2 shot Lemon Ginger-Echinacea Juice by R.W. Knudsen. Same as above... all natural. (7.5 calories/1.75 carbs)

1/2 shot Kroger Light Apple Juice Cocktail (1.5 calories/.37 carbs)

1/2 shot Ocean Spray Diet Cranberry Juice
(.3 calories/.12 carbs)

Use a large glass. Add lots of ice for hydration and there you have it. Happy New Year!

Grand Total:  Zero fat, 105.3 calories, and only 2.24 carbs! A true Low Carb Cocktail.

Drinking out? Compare this to P.F. Chang's fruit cocktail, the Mai Tai, coming in at a whopping 432.5 calories and approximately 62 carbs.

Sour Apple Martini Light a Diet Apple Martini Recipe

A Healthier Cocktail

Sour Apple Martini Light

1.5 to 2 shots Smirnoff Sour Apple Vodka (103.5 cal/0 carbs)
1/4 oz (about a capful) Sour Apple Liqueur
4 shots Kroger Light Apple Juice Cocktail
Squeeze of Lime

Use a 16 oz. glass and add lots of ice. Kroger Light Apple Juice Cocktail has only 25 calories per 8 oz. Which means 12.5 calories for these 4 ounces. Smirnoff Apple flavor has 69 calories.

But if you'd like to save even more calories, just use Smirnoff regular. It has only 56. Remember, flavored liquor often has more calories and carbs than plain. See here:

Sour Apple Liqueur has 72 calories per one ounce shot! Wow. A regular martini requires a full ounce. But, here, with only 1/4 oz. we will reduce that to only 18 calories.

So there are 103.5 calories in 1.5 oz. Apple vodka; and 12.5 calories in four ounces of the light apple juice; and only 18 in the liqueur... for a whopping calorie total of 134. Compare that to the usual Apple Martini recipe of 2 oz. of vodka and 1 oz. Apple Liqueur for 210 total calories.

And for carb watchers, the juice has only 6 carbs per 8 oz. So 4 oz. = 3. Smirnoff Apple Vodka has zero and the liqueur (one ounce has 7.5 carbs), so at 1/4 oz. it comes to about 1.9. Total carbs then equal 4 + 0 + 1.9 = 5.9. Not bad for such a "sweet" sour drink.


And it's nummy! Give it a try.

Recipe: Christmas Coffee

16 oz. Coffee Cup
8 oz. Water
3/4 shot Old New England Egg Nog pre-prepared with added Bourbon Whiskey, Rum, and Brandy (a liquor store item)
1 teaspoon Folgers Instant Coffee (I prefer Decaf)
1/2 teaspoon General Foods International Chai Latte Sugar Free (does contain aspartame - use sparingly)
1/2 teaspoon Sugar Free or No Sugar Added Hot Cocoa Mix
1 T Fat Free Kroger's Original Coffee Creamer
2 T Skim Milk
Low Sugar Whipped Cream (or Mini Marshmellows)

Place water, nog, milk, and creamer into cup and heat on High in microwave approximately 3 minutes... until steamy.
Add the rest of the ingredients and stir vigorously.

If ingredients do not dissolve completely, use a swisher (a cup-sized whisk) and swish until frothy. Add a dollup of whipped cream (or mini marshmellows).

Delightfully serves ONE.

Diet Cocktail Recipes Amaretto Sour Light

Choose All Natural Simply Limeade or Simply Lemonade.
Traditional Amaretto Sour
2 shots OJ
2 shots Sour Mix
2 shots Amaretto Liqueur

Amaretto Sour Light (my favorite)
2 shots OJ (all natural with no added sugars is best)
2 shots All Natural Simply Limeade (Contains no High Fructose Corn Syrup)
1 shot Amaretto (Lots of sugar! Drink sparingly.)

Amaretto Sour Super-Light
1 shot OJ
1 shot All Natural Simply Limeade
½ shot Amaretto
½ shot Rum (optional)
½ shot Vodka (optional)
2 shots Water

A Little Stronger and Not So Light  (all below)
1 shot Vodka
½ shot Rum
¾ shot Amaretto
2 OJ
2 ½ shot Limeade
1 shot water

Very Nice
1 shot Rum
½ shot Amaretto
½ shot Triple Sec
2 shots Limeade
2 shots OJ
1 shot Kroger's Light Apple Juice

Variation
1 shot Vodka (or 1 ½ Vodka & ½ Amaretto if you like it less sweet)
1 shot Amaretto
2 shots OJ
2 shots Limeade

For A Twist
Instead of OJ, use Tropicana Orange Mango Juice

Rum Sour
½ shot Rum
½ shot Triple Sec (or 1 shot Rum or 1 shot Orange Vodka only)
½ shot Amaretto
2 shots Orange Juice
1 shot Limeade (or you can use 7 calorie/carb G2 "Low Calorie" Gaterade Lemon/Lime)

Fresh Lemon squirt

Another Variation
1 shot Rum
½ shot Amaretto
2 shots OJ
1 shot Limeade

And Another
1 shot Rum
1 shot Amaretto
2 shots OJ
3 shots Limeade

Easy Low Carb Diet Curry Chicken Recipe / A Low Carb Food

Easy Low Carb Curry Chicken

1 T Extra Virgin Olive Oil or Zero Fat Olive Oil Spray
1 T Smart Balance* or I Can't  Believe it's Not Butter (non-hydrogenated, no transfat)
2 Onions Diced

4 Skinless Chicken Breasts Diced (can be bought frozen and thawed) and visible fat removed.

1 Packet Chicken bouillon (paste is best)

1 10 oz. Can Diced Tomatoes (Diced Tomatoes with Green Chilis is best!)

1 12 oz. Jar of Chunky Salsa

1 Can Pineapple Chunks or Shredded (No Sugar Added). Optional: To reduce carbs even more, skip the pineapple. For an extra zing, add mango chunks instead!

2 T Curry (to your taste: hot, medium, or mild). I generally use Masala. But any kind will do.

2 T Dehydrated Beans (I use Fantastic World Foods All Natural Black Beans) for a healthier thickener than flour. Comes in a box.

1 teaspoon "No Salt" salt substitute or Real Sea Salt

1/3rd Cup Sour Cream (full fat or non-fat depending on which diet you're on)

2 Tablespoons Ranch Dressing 

Melt oil in deep frying pan. Start sauteing onions. Add chicken pieces and bouillon and brown on medium heat. Once browned, sprinkle with salt, curry, and dehydrated beans. Stir. Turn heat down to simmer on low. Add salsa, diced tomatoes, and pineapple chunks. Include the fluid in each. Do not add extra water. Let simmer for twenty minutes.

Just before serving add sour cream and ranch dressing.

Makes 8 servings.

Note: There are no potatoes or rice added to this curry to keep the carbs low. However, if you're not watching carbs, feel free to serve this dish along with whole grain rice. You could even add peas to the recipe (frozen taste the best).

*Chicken may be substituted with lean pork or beef.
